These vegan casserole recipes are perfect for feeding a crowd – or just for filling your belly!

Oh, there’s so much to love about casseroles!
First up, they’re simple to make. You just need some basics, like onion and/or garlic, a bunch of veggies, and if you like, some carbs, like rice or pasta. Secondly, they’re easy to cook and to serve, since essentially, a casserole is just any food that is cooked and served in the same dish. Thirdly, they’re filling as heck – the perfect comfort food on a cold or depressing day. And finally, if you happen to have any leftovers, they’re usually easy to freeze.
We often think of casseroles as being full of cream and cheese, and while this may be the case for some of the vegan casserole recipes below (veganified, of course!), there are also lighter versions I’ve included that are mainly just veggies.
Another casserole misconception is that they’re always savoury. Nope! There are plenty of deliciously warm, sweeter versions of casseroles that you can serve up for breakfast, brunch or dessert – I’ve included a few ideas below.

This cranberry and pear French toast dish boasts all the flavours of fall fruits. Not got those on hand? Sub in raisins, prunes or apples. It’s hot, sticky, and sweet, and drizzled with some maple syrup, this makes the perfect breakfast or brunch dish.

2. Overnight Baked French Toast Casserole
This dish has all the winning components for a comfort food. It’s hearty, sweet and loaded with delicious cinnamon-y flavour goodness. Plus, it’s easy to make, and you can use up stale bread – and make it taste even better than it did fresh!

3. Blueberry Breakfast Casserole
This dish is a great way to start the day. It’s vegan, gluten-free and mildly sweet with a pudding-like consistency under a crispy topping. Plus, casseroles are great for breakfast because you do all the work the night before. In the morning you just pop them into the toaster oven and enjoy! Frozen blueberries will do just as well as fresh here.

4. Creme Brûlée French Toast Casserole
Take your love of French toast to the next level by turning it into this scrummy casserole! Made the night before, it’s baked and then topped with sugar and bruleed. You can switch out the vanilla for other flavours. For example? Pumpkin would work so well, too!

Before going vegan, I always found myself sluggish and bloated after eating lasagne. But this dairy-free recipe feels so much lighter on the tummy, and is super easy to make with simple ingredients. It’s full of Mediterranean flavours and has loads of nutrients, too.

The casserole is layered like a lasagne, but uses slices of eggplant instead of pasta, which is perfect for those on a low GI or gluten free diet. If you’re from the UK, then you”ll know very well what this dish is all about! Leftover veggies and potatoes are mixed together and then fried to make crisp veggie cakes. It’s super flexible, because you can pretty much use whatever vegetables you have on hand (though cabbage and carrot is he traditional way), and it’s a great way to prevent food waste.

16. Hungarian Potato Casserole
This is a vegan take on one of the national dishes of Hungary – Rakott Krumpli! The traditional casserole is made with sausage, hard-boiled eggs and tons of sour cream. This healthier, but just as comforting vegan version is made with potato slices, tofu eggs and kidney beans with a creamy cashew sauce.

Yet another one of the pioneering vegan casserole recipes! In the 70s, this dish was considered a bit of a hippy staple, but today, vegan shepherd’s pie has several different variations. For example? You can swap out the potato topping for sweet potatoes; add nutritional yeast to make the potatoes cheesy; use soya ‘meat’ instead of lentils…you get the idea!

This is one of the most classic vegan casserole recipes. It’s a traditional Greek moussaka, but made vegan with lentils (instead of meat) and red wine, layers of roasted aubergine, sliced potato and a creamy dairy-free béchamel sauce. Serve with crusty bread in winter and a simple green salad in summer.

I love how this recipe marries Mediterranean veggie flavours with the crunch of South American quinoa. It’s easy to make in a skillet or casserole dish, and in my opinion, this is even better with lashings and lashings of olive oil and a crusty roll on the side.

Made from a base of cashew, almond milk and arrowroot starch, this casserole is just as rich and creamy as the traditional dairy-laden dish, minus the heavy, sluggish feeling you’d get post-meal! This is actually quite an elegant dish, and makes for a perfect casual dinner party centrepiece.

26. Butternut Squash Enchilada Casserole
Roasted butternut squashed layered with tortillas, peppers, black beans and a rich enchilada sauce…need I say more? Use the vegan cheese of your choice to make it vegan, and top with diced avocado, fresh cilantro and serve with a side of chips and salsa!

Cauliflower wings, step aside. This cauliflower casserole is my new favourite way to use the cruciferous veg! This casserole is rich in protein and fibre, is hearty and healthy and made with just a few simple pantry spices.

This is definitely one of the lighter vegan casserole recipes! Low on carbs but high on flavour, this is a great recipe to make as a side dish for a fancy meal, or as a main meal in summer.

30. One-Pot Mushroom Tetrazzini
This recipe is a vegan take on the popular Italian dish Tetrazzini. It’s dairy-free but super creamy thanks to the vegan butter, nut milk and nooch! The noodles, mushrooms and peas are all cooked together in one pot, and are then baked with crunchy breadcrumbs.
