25 Indulgent Breakfast in Bed Recipes For Vegans

Whilst it shouldn’t come down to one day to show our loved ones  just how much we cherish and adore them, we usually do celebrate love on certain fixed days: birthdays, Mother’s Day, Father’s Day and Valentine’s Day, for example. On those marked occasions, we tend to spoil our special others rotten with love. But why not demonstrate your feelings any day of the week with a special treat: breakfast in bed!

I’ve rounded up some pretty delicious Breakfast in Bed Recipes  that are not only so gorgeously presented, they’ll wake anyone up with a smile, but they’re also pretty health, and of course, vegan friendly. Whether your certain someone loves a bit of  cake, has a need for caffeine or likes their breakfast more on the savory side, there’s a great selection of recipes to choose from.

1. Pink Sunrise Breakfast Smoothie

Start the day off pretty! This smoothie is packed full of both fruit and root veggies, and they all blend together to give this wonderful pink hue. If fruit like strawberries and raspberries aren’t in season yet, don’t worry as this recipe calls for frozen fruit.

2. Peanut Butter Espresso Smoothie

This recipe infuses both espresso and peanut butter to make a super thick and delicious smoothie that’s super satisfying and dare I say – indulgent! It’s creamy from the almond milk, banana and peanut butter but there’s also that hit of coffee for the caffeine addicts among us.

3.  Cold Brew Caramel Frappuccino

As the weather is slowly but surely getting hotter, sometimes a cold drink is exactly what we need. This is great as well because, unlike the cold drinks you’d buy in coffee chains, this one isn’t laden down with sugar and chemicals! Oh no. Dates, my friends, dates!

4. Berry & Coconut Fruit Salad with Lemon Dressing

Sometimes a good old fashioned fruit salad can be just what the doctor ordered. Whether you serve this up on the side to some french toast (further down) or simply with a morning pot of tea, there’s nothing to not love about this.  The lemon dressing adds some zing: just sub maple syrup for the honey to make it vegan.

5. Papaya & Coconut Chia Pudding

Chia puddings are a fab little recipe to rustle up to treat your mum this Mother’s Day, simply because if you’re pushed for time you can make it the night before and simply add the fruit the next morning. Plus they’re full of goodness, so they’ll be a healthy treat, too. To make this just that little bit more indulgent, I’d add some vegan coconut yogurt on top of it.

6. Vanilla, Almond & Fig Granola Parfaits

This vanilla, almond and fig granola looks so damn good. This is really quick to throw together; simply combine the ready made granola with some coconut yogurt and some fresh blood oranges. The infusion of flavours and textures works so well – go make this!

7. Vegan Coconut Yogurt

Okay, so I’ve mentioned coconut yogurt in a few of the recipes above. So, why not make your own this Mother’s Day? It will take around 12 hours to make though, so you may want to make this ahead of Sunday. But you could add this to either some of the recipes above, add a dollop onto some pancakes or simply enjoy with some berries and granola.

8. Vegan French Toast

Fact: vegan French toast is actually pretty easy to make! This one is topped with a heaping of coconut yogurt, maple syrup and mixed berries and I have to say that it looks insanely good – like I’m actually salivating. You could even make a stack of these for you all to enjoy.

9. Baked Coffee Cake French Toast

I am 100% making this recipe for my mum for Mother’s Day. Coffee and toast combined?! That’s a winning combination. This is a little heartier than french toast, it’s almost cake-like. But it looks delicious! Plus, who doesn’t like coffee and cake? It’s like the two were made to go together.

10. Ombre Strawberries & Cream Pancakes

Gradient pancakes that end in a pretty pink?! Oh my. I’m making these every day for the rest of my life. Make a stack of these and really impress someone this Sunday. I’d top these with coconut whipped cream and lots of maple syrup and fresh fruit. But you can always use whichever ingredients you like!

11.  Mini Coconut & Banana Buckwheat Pancakes

Can you tell I like pancakes? These pancakes are thicker than your usual crepe like pancake, so they’re wonderful for stacking into a pile and devouring together. The best part? Adding coconut milk between each pancake so that when you cut into them the coconut yogurt oozes out and leaves a yummy puddle to dip your pancake chunks into.

12. Blueberry & Coconut Baked Oatmeal

It’s a huge fan of oatmeal, and I didn’t think it could get better until the first time I baked it. It’s a game changer, seriously. It becomes almost dessert-like with its sweet crunchiness. Bake this and then present it on a tray with a stack of bowls and spoons and enjoy breakfast in bed together with a loved one.

13. Raw Vegan Cinnamon Donuts with a Fruit Pink Frosting

These raw cinnamon donuts come with a funky, fruity frosting. But unlike real donuts that are packed with sugar and will cause a sugar crash an hour or so after eating, these are made from lots of goodness, and are sweetened from coconut, dates and vanilla bean powder.

14. Fully Loaded Vegan Blueberry Muffins

I love to make muffins. Not only do they smell delicious whilst baking, but they’re just so yummy when they’re still warm from the oven and you’re tucking in. They especially taste great the next day if they manage to stick around long enough. A truly tasty treat, and easy to eat in bed.

15. Berry Spelt Scones

We always roll out the scones during special occasions. I think it’s a part of our British heritage to enjoy a good scone every now and then with a pot of tea (well, coffee in my household) with the family. Whilst I’m used to sometimes sickeningly sweet scones topped with thick cream and jam, these are a wonderful change. They’re baked with the berries inside of them to give them a beautiful fruity flavour. I’d still add some coconut whipped cream.

16. Strawberry, Banana, Kiwi & Chia Fruit Tarts

These remind me of those fancy looking cakes you get in the window of French cake shops. Imagine serving these up to someone in bed and seeing their sleepy faces transform with delight. They not only look pretty fancy but they’re seriously packed with both goodness AND flavour. I mean, look at all that topping!

17. Chocolate & Quinoa Stuffed Strawberries

Sometimes simplicity is best, so if you’re looking for something easy to make why not make these stuffed strawberries? They’re super easy to make, they’re full of healthy grains (hello, quinoa) and mixed with chocolate and then topped with crushed nuts. If you’re all about a big celebration, you could serve these as a breakfast in bed treat alongside a glass of bubbles, or reserve them for a treat later on in the day. Either way these will go down splendidly!

18. Dragonfruit Cheesecake with Coconut Oatmeal Crust

I had to add this recipe. Just look at that colour . . . and also, when else do we have an excuse to eat cake for breakfast and not feel too bad about doing so? The crust on these is made from oats and shredded coconut which gives such a subtle sweetness to the base of these cheesecakes. And that filling is super creamy thanks to the vegan cream cheese mixed with cashews and coconut cream. That gorgeous colour? Dragonfruit, of course.

19. Miso-Tahini Avocado Toast with Black Sesame Gomasio

Time for something savoury, right? Avocado on toast always goes down a treat in my household; it’s easy to make, super good for you and it tastes soo good. There’s so much nutrition here: gut friendly miso on a protein rich tahini base with the healthy, creamy avo, all topped with a salt seasoning.

20. Vegan Bagels with Tomato Lox & Cashew Cream Cheese

Salmon and cream cheese bagels are considered a pretty good breakfast in bed recipe, but personally the idea of eating salmon 1. in bed, 2. at all and 3. first thing in the morning, well, it makes me feel a little queasy. Good news: we can not replicate that popular dish without the use of stinky salmon. This recipe uses tomatoes to re-create a salmon type texture, and the cream cheese itself is made from cashews.

21. Mushroom & Spinach Omelette

Some of us like a pretty hearty breakfast in the morning, so this recipe is truly great if you’re looking to make something a little more filling than cake. And also, not everyone has a sweet tooth so this savory dish is perfect. Plus the omelette is green from sneaking in some spinach which you won’t even taste. You can fill this with whatever you fancy but I like the combination of mushrooms, onions and a little garlic with lots of greens.

22. Soy-Free Vegan Benedict

Eggs Benedict is another recipe that is considered pretty fancy pants and this is a vegan-friendly take on the popular meat and egg based recipe. The ham is replaced with shiitake mushroom bacon, whilst the hollandaise sauce is  made from ingredients like cashews and nutritional yeast  to make is incredibly creamy. Instead of eggs, this recipe has chickpea patties, which are super easy to make, and taste SO good.

23. Zucchini Cakes with Spinach

As many of the recipes on here were sweeter treats, I thought I’d add a recipe that is really great for those with less of a sweet tooth. These little zucchini cakes sit on a bed of greens and topped with a vegan basil sour cream and then garnished with scallions. They look pretty professional, right?

24. Beetroot Lemonade

This is a wonderful way to start the day! Switch the honey for either sugar or agave to add sweetness. Pop this into some mason jars and garnish with mint leaves and lemon wedges to look even prettier. Your body’s levels of acidity will go right down, prepping you with good health for the day to come.
