I have to say, I think autumn may be my favourite season. The air is crisp and fresh, our clothes become comfortably oversized and cosy and PSLs become a daily ritual. What’s not to love about fall? The natural world around us explodes with fiery colour, and the harvests come to our tables.
And of course, there’s one crop that we tend to favour the most: pumpkin!
Why eating pumpkin is great for your health
Not only is pumpkin great for your skin, but it’s also packed full of fibre, vitamins and antioxidants that will take good care of our bodies over the impending harsher months.
Pumpkin is also full of beta carotene, which protects your skin from sun damage. See why eating seasonally is important? It’s the perfect food to chow down on after summer holidays!
Pumpkins are also pretty versatile, and can be thrown into anything from chia puddings and ice creams to warming soups and hearty pasta dishes.
Pumpkin cooking tips
You may be tempted to buy canned pumpkin puree, but why not just use the pulp of your jack-o-lantern after carving it? Most cans are still coated with harmful BPA plastic, and canned veggies lose a lot of nutrients. Plus, waste not, want not, right?
You can also salt and toast the seeds for a huge zinc boost. And believe me, the taste of a fresh roasted pumpkin isn’t only much better, it’s also way better for you!
But if you’re really in a rush or are feeling lazy, here’s my top tip: try using frozen pumpkin. I personally roast a bunch of pumpkin all at once then freeze what I’m not using immediately for later use.

1. Pumpkin Pie Overnight Oats
If this deconstructed (yet very healthy!) version of a pumpkin pie topped with pumpkin butter and coconut yogurt won’t get you out of bed on a cold, rainy morning, nothing will.

I couldn’t make a list of vegan pumpkin recipes without adding the classic autumn latte! Sure, Starbucks may take the credit for inventing the PSL, but making your own at home is heaps healthier. Gone are all the E-numbers and sugar, and instead, you just have a sweet, steaming cup of spicy goodness – with a caffeine kick.

7. Crispy Herbed Pumpkin Fries
Pumpkin’s a bit funny in the sense that sometimes, when you buy a super dense, small orange one, it’s got the texture of a root vegetable. Which means it’s perfect for making fries! This recipe adds a bit of savoury spice to these to make them even more tantalising. Why not serve them up with a pumpkin burger? (recipe below).

8. Jack-o-Pumpkin Brunch Sandwich
Sweet maple pumpkin butter is slathered onto two slices of grilled English muffin, and then vegan breakfast sausage is added alongside grilled mushrooms and then topped with gooey vegan cheese. Add in some fresh greens like arugula, and you’ve got yourself the brunch sandwich to end all brunch sandwiches.

10. Pumpkin Vegan Burgers
If you’re looking for a scrumptious burger recipe, then look no further. The patty is made from pureed pumpkin, rolled oats and mashed chickpeas. It’s then seasoned with paprika, garlic and a little salt. Throw it in a bun and top with sauteed onions, some crisp lettuce, mushrooms and pomegranate seeds. Voila! The perfect burger for fall.

11. Freezer-Friendly Pumpkin Soup
How can I not add a soup in my list of vegan pumpkin recipes? Soup is the perfect recipe for these colder months, and it’s super cheap and easy to make, so make it in bulk batches and freeze it so it’s ready and waiting. This will be so soothing for when the weather outside is cold and bitter. Plus, you can top it with some delicious roasted pumpkin seeds!

After cleaning out your pumpkin, don’t throw away those seeds! Dry them out and turn them into a protein-rich snack. Coconut milk and maple syrup are perfect pairing they add a rich creaminess and perfect sweetness. the flavors of whatever they are with having an extra caramel. I can only imagine how amazing it would be baked or even a bowl of ice cream.

Most of these have flour making them totally not paleo

The recipes are vegan OR Paleo – it is meant to be a mix of both, not meant to indicate that the recipes are both Paleo AND vegan. Hope that clarifies a bit. But you can sub coconut or almond flour for most anyway, which would make them Paleo 😉
