I find it pretty funny that vegan vlogger supreme Kristen Leo used to be an Emirates flight attendant. I can just picture her sweetly asking passengers: ‘chicken or beef?’ and trying to not gag whilst serving the reheated dead flesh 10,000 feet in the sky.

Because, you know, she’s all about the vegan life. From her dedication to wearing (mostly vintage) cruelty free fashion to her totally plant based diet, this is one Greek goddess who makes some seriously conscious choices in her everyday activities, and it serves her well – she’s stunning, slim, healthy, and has a head of hair that many would choke a cow for, as her tens of thousands of dedicated followers and subscribers will attest to.

So, we thought it would be a good idea to ask her a few questions to discover just what it is she eats to get that healthy glow and those flowing locks.

What do you eat in a typical day?

Breakfast is a 2 banana smoothie with a spoon of spirulina, some rice milk and some other seasonal fruit. Later, I drink a vegan chai latte. For a snack, I’ll have a few rice cakes with olive pate and vegan cheese and some raw nuts. Lunch is usually something like a vegan curry and steamed veggies, then dinner is  usually a bowl of steamed veggies, or a bowl of cornflakes. Or both! Heh heh.

Favourite comfort food?

Chocolate mug cake! SO good and such an easy recipe to make.

Thoughts on carbs?

Carbs are bae.

Do you count calories?

Only when I first went vegan. It was hard to break that habit since I was doing it for years, but now I just eat intuitively and don’t stress about it.

What made you go vegan?

I was plant based for a couple of months because I was trying it as a weight loss diet, but after watching a few documentaries like Earthlings and online speeches like “101 reasons to go vegan” and Gary Yourofsky‘s “Best speech ever” I felt very connected with the philosophy and logic behind veganism and realized it wasn’t only a dietary choice but also a compassionate lifestyle. I aligned with it.

Favourite food?

Ah! There’s so much food! How can someone choose just one? I keep thinking figs; they were my favourite even before going vegan, so I’ll stick to that.

What do you cook best?

Popcorn! I’m a terrible cook but I make the best popcorn, no burns, all kernels pop and so good!The secret is dropping only three kernels in the pot with the olive oil first. Once they all pop, remove the pot from the stove, wait 30 seconds, then add all the kernels and place back on the stove. Try it!

Favourite foods discovered when travelling?

Thai green curry! It’s so good! That’s all I wanted to eat on my last week in Thailand.

Dream dinner?

Depends on the day. Today I would love a big Buddah bowl with some tempeh and lots of veggies and a potato curry; maybe some seitan and tofu as well? As many of the expensive soy meats as possible.

Death row meal?

Two buckets full of sweet ripe figs!
