Cold cereal and burnt toast are out of the question. Especially when there are so many great options!

Here below, I’ve rounded up some pretty delicious vegan breakfast recipes that are not only so gorgeously presented, but they’re also pretty healthy, too!

Whether you’re in a rush in the early hours, need a caffeine hit, or have the luxury of enjoying a long, leisurely breakfast in bed, there’s a great selection of recipes to choose from.

1. Peanut Butter Espresso Smoothie

This recipe infuses both espresso and peanut butter to make a super thick and delicious smoothie. It’s super satisfying and dare I say – indulgent! It’s creamy from the milk, (use any kind you like), banana and peanut butter. But there’s also that hit of coffee for the caffeine addicts among us.

2. Cold Brew Caramel Frappuccino

Sure, coffee is essential for vegan breakfast in bed recipes. So I just have to include this exquisite drink. Coffee doesn’t get more artisanal than this! Easier to make than you think, too.

3. Vanilla, Almond & Fig Granola Parfaits

This vanilla, almond and fig granola looks so damn good. This is really quick to throw together; simply combine the ready made granola with some coconut yogurt and some fresh blood oranges. The infusion of flavours and textures works so well. Definitely one of my favourite vegan breakfast in bed recipes!

4. Vegan Coconut Yogurt

Okay, so I’ve mentioned coconut yogurt in a few of the recipes above. So, why not make your own this Mother’s Day? It will take around 12 hours to make though, so you may want to make this ahead of Sunday. You could add this to some of the vegan breakfast recipes above, add a dollop onto some pancakes, or simply enjoy with some berries and granola.

5. Vegan French Toast

Fact: vegan French toast is actually pretty easy to make! This one is topped with a heaping of coconut yogurt, maple syrup and mixed berries and I have to say that it looks insanely good – like I’m actually salivating. You could even make a stack of these for you all to enjoy.

6. Coconut & Banana Buckwheat Pancakes

Can you tell I like pancakes? These are thicker than your usual crepe like pancake, so they’re wonderful for stacking into a pile and devouring together. The best part? Adding coconut milk between each pancake! When you cut into them, the coconut yogurt oozes out and leaves a yummy puddle to dip your pancake chunks into. YUM!

7. Blueberry & Coconut Baked Oatmeal

It’s a huge fan of oatmeal, and I didn’t think it could get better until the first time I baked it. It’s a game changer, seriously. It becomes almost dessert-like with its sweet crunchiness. Bake this, and then present it on a tray with a stack of bowls and spoons and enjoy breakfast in bed together with a loved one. It’s another of my fave vegan breakfast recipes!

8. Oil Free Vegan Donuts

These vegan donuts are surprisingly healthy! How so? Well, unlike real donuts that are packed with sugar and will cause a sugar crash an hour or so after eating, these are made from lots of goodness! Plus, they’re super fluffy, and not deep fried.

9. Fully Loaded Vegan Blueberry Muffins

What’s a list of vegan breakfast in bed recipes without muffins? Not only do they smell delicious whilst baking, but they’re just so yummy when they’re still warm from the oven and you’re tucking in. They especially taste great the next day if they manage to stick around long enough. Here’s a great tip: add some chia seeds for extra protein!

Yep, I’m a Brit. So I think scones are the best! They’re not too sweet, and of course, because they go oh-so-well with jam, vegan butter, and maybe some vegan clotted ‘cream’. Not keen on blueberries? Switch in whatever berry you love!

This is probably my very favourite of all the vegan breakfast in bed recipes. Because Mexican food is life! You can swap in your favourite fillings for most of these, too. This one features tofu and vegan queso, but you can also just put in whatever you have on hand: beans, rice, peppers, spinach – you name it!

Time for more savoury vegan breakfast in bed recipes, right? Avocado on toast always goes down a treat in my household. It’s easy to make, super good for you and it tastes sooo good. There’s so much nutrition here! Gut friendly miso on a protein rich tahini base with the healthy, creamy avo, all topped with a salty seasoning.

16. Vegan Bagels with ‘Lox’ & ‘Cream Cheese’

Salmon and cream cheese bagels are considered a pretty good breakfast in bed recipe. But personally the idea of eating salmon 1. in bed, 2. at all and 3. first thing in the morning…. Well, it makes me feel a little queasy. The good news: we can now replicate that popular dish without the use of stinky salmon. This recipe uses tomatoes to re-create a salmony texture, and the cream cheese itself is made from cashews.

17. Soy-Free Vegan Benedict

A great eggs Benedict is a must in any list of vegan breakfast in bed recipes. But how to make it without, you know, the eggs?

This is a vegan-friendly take on the popular meat and egg based recipe. The ham is replaced with shiitake mushroom bacon, whilst the Hollandaise sauce is  made from ingredients like cashews and nutritional yeast to make it incredibly creamy.

Instead of eggs, this recipe has chickpea patties, which are super easy to make, and taste SO good. I reckon this recipe may just make even the most devoted carnivore go vegan!
