Once upon a time, gourmet food was all about the animal products. Veggies were a mere garnish to dishes like Chicken Kiev, Beef Bourguignon or Crab a la King.

Sadly, that’s still true to a large extent. Today’s top chefs, such as Heston Blumenthal, Joel Rubichon and Marco Pierre White are still obsessed with meat, butter and cream. But there’s good news, too! After realising the health benefits of a vegan diet, even former vegan-hater Gordon Ramsay is coming round to the idea of veganism.

Of course, the fact that the demand for vegan options is spreading doesn’t hurt, either. These chefs know that in order to stay relevant, they need to think up some delish vegan dishes, or fade into oblivion. And think up those dishes they have done indeed!

Below, I’ve collected together some of my favourite vegan recipes by chefs worldwide. Many dishes are fully vegan, some need a little tweaking to make them so, but they’re all super diverse and yummy!

2. Raymond Blanc: Pea Dip

French chef Raymond Blanc has come up with the perfect snacky starter. This fresh pea dip is one of the best vegan recipes by top chefs for enjoying seasonal veggies all year round. It’s super refreshing, tasty and more-ish, and is a great substitute for that usual vegan staple, hummus. Top tip: pop all veggies into the fridge ahead of serving so they’re fresh and crisp.

3. Alexis Gauthier: Vegan Faux Gras

The multi-award-winning French chef has been vegan since 2016, which means his menu has shone the light on vegetables over the past years. Alex Gauthier teamed up with BOSH to create a really innovative dish: vegan faux gras. Made from lentils, walnuts, fresh veggies and lots of herbs, it makes the most decadent spread that’s just perfect for smearing on some hot sourdough.

Chinese chef Ming Tsai is convinced that food is medicine. Medicine so powerful, it can boost or break your health, depending on what you choose to eat. That’s why he’s now offering an array of ultra-healthy recipes to his fans, including this one. And this dish below is one of the healthiest vegan recipes by top chefs! The maitake mushrooms here are anti-inflammatory and help the immune system. And the bok choy contains compounds that protect cells from DNA damage. Served with some brown rice, this makes the perfect meal.

Heston Blumenthal is known for his creative, often artistic, recipes. And this rich, filling meat-free chilli is no exception! Every bit as delicious as the carnivorous dish it’s inspired by, this is a flavour explosion! There are chargrilled peppers, marmite (yes, really!), star anise and…spiked vegan chocolate! Intrigued? 6. Gordon Ramsay: Vegan BLT

The angry, bulldog of a chef may have been pretty vocal about his feelings on vegan diets before. But it seems Gordon Ramsay is slowly opening up to the idea of a cruelty-free diet. While his vegan recipes are so far pretty minimal, you’ve gotta love this innovative vegan BLT!

Celebrity chef Curtis Stone has many vegetarian recipes on his website that can be adapted to be vegan, alongside some actual vegan ones. One that caught my eye was this grilled zucchini with basil and balsamic vinegar. The perfect side dish, the flavours all combine to really elevate the simple veggie.

8. Julia Child: Fluffy Bread

Chef Julia Child was famous for her Cordon Bleu training in the kitchen. What that mean was TONS of cream, butter and always, always meat. BUT! I managed to find one vegan recipe of hers. Light, fluffy and easy to make at home, this bread will become a household essential. Use it for toast, a sandwich or to make it into croutons. Yum!

9. Joseph Centeno: Vegan Queso

Joseph Centeno has created one of the most useful vegan recipes by top chefs! This vegan queso can be used on nachos, for dipping in crudites, or even mixed throughout pasta. The celeb chef is most famous for his Tex Mex creations, so you can also sub in this recipe for most of the cheesier dishes in his repetoire, too.

American chef David Chang is the founder of the popular Momofuku restaurant group. It’s loved for its modern Korean dishes and healthy approach to eating. And one dish we’re loving in his crunchy noodle coleslaw. Honestly, we never would have thought to pair dried ramen noodles with coleslaw, but it just works!
